  中国朝鲜族民俗食品包装装潢设计中只有不断地挖掘和利用民俗文化的价值,抓住地域特点、民俗特色,追求创新、注重质量,民俗食品的开发才能尽快走出低谷,开辟新的具有延边朝鲜族地域特色的民俗食品品牌,使延边民俗食品业造成商品与民俗文化一体化的发展模式。只有这样,才能有利于延边朝鲜藏民俗文化资源的保护和传承,并能有效的形成民俗食品产业新的经济增张点。

  一、中国朝鲜族民俗饮食文化的产生与发展

  1、中国朝鲜族特色民俗文化渊源

  “中国朝鲜族是一个迁入民族,从19世纪中叶开始,由于朝鲜北部连年灾荒,加之官府沉重的苛捐杂税,灾民纷纷跨越图们江、鸭绿江等界河,大批迁徙到中国东北边疆地区,在此开荒种田、赖以生存。大量移民在中国独特的地理、历史环境中,经过长期的生产、生活,逐渐形成了一个既保持固有民族传统和基本特征,又融合了中国色彩的新民族共同体——中国朝鲜族。1952年,我国在朝鲜族人口最多、聚居最集中的吉林省延边地区设立了民族自治行政机构——延边朝鲜族自治州,从此朝鲜族成为中国民族大家庭的重要成员”。

  “民俗风情是民族生活的体现,并因民族的生存空间不同而有地方的区分,“十里不同风,百里不同俗”的俗语正是体现了民俗的地方性特征”。同一民族的风俗习惯是相近的,但由于居住地域的不同和历史的变迁,即使同一民族的风俗习惯也会呈现很大差异。

  从民族特征上看,延边朝鲜族可以说是中国朝鲜族的一个缩影,在饮食文化方面尤为如此。“延边朝鲜族在特殊的地理、历史、经济条件下,继承了传统饮食习惯、融合了东北汉族饮食风味、汲取了半岛南部的饮食风格,形成独具特色的延边朝鲜族饮食文化风俗,其尚天然、重食疔、融多元的饮食文化特征,不仅促进了民族文化发展,更丰富了中华饮食文明”。

  二、朝鲜族传统食品包装现状及存在的问题

  随着时代的发展与历史的变迁,朝鲜族的特色食品逐步向产业化的发展方向迈进。朝鲜族饭桌上的各种菜肴经过精致包装走进了超市,走出了延边,有些产品甚至远销国内外。为弘扬朝鲜族饮食文化和振兴地方经济的发展做出了应有的贡献。但是,延边产品包装设计创意、质量、水平与朝鲜族传统食品业飞速发展的强势形成了极大的反差。各产品的包装设计风格大同小异,根本没有朝鲜族传统特色。民俗食品的开发与研究始终是延边食品业发展中非常薄弱环节。目前,延边民俗食品市场发展过程中存在着诸多制约因素,如;产品加工粗糙、包装档次低、创意陈旧、无特色等缺点。同时,民俗食品生产企业多以民营企业或个体经营者多采用小铺面、小作坊的经营方式。南于规模小、实力弱,所经营的民俗食品品种类较为单一,而且,对山珍等地方土特产产品的加工还停留在初加工上,产品加工粗糙,包装一般,缺乏特色,档次低劣。民俗食品生产与包装已成为延边民俗食品业发展中的一个滞后因素,其开发、研制、销售等方面均存在诸多问题,严重的影响了民俗食品业的整体发展。

  造成这种现象的主要原因是:

  轻视消费者的特殊需求。民俗食品开发、设计、生产企业对市场经济缺乏足够的认识,民俗食品的市场调查存在着一定的语言障碍、文化障碍和资金障碍。

  市场经营不规范。由于民俗食品刚刚进入开发阶段,民俗食品销售没有形成规模,缺乏大型、正规的生产基地和销售中心。缺乏规范管理,很难形成有效的市场管理机制;缺乏行业指导,行业自律机制很难建立。其结果是伪劣商品充斥市场,民俗食品形象受损。

  品牌意识薄弱。民俗食品没有充分重视品牌建设和品牌保护。特色明显、品位高的民俗食品包装少,对消费者的吸引力不大。在延边民俗食品企业收入可持续增长的情况下,民俗食品收入占地方产品收入的比重的增长并不大。其主要原因是:

  重食品开发,轻包装的落后观念:

  审视近年来延边民俗食品业的发展,我们会发现在整体观念上,民俗食品生产企业重产品开发,轻食品包装装潢环节。行业普遍认为有好的产品,消费者就会来买、产品销路就会好,再加上投资成本相对较低,收益高,资本回收期也比较短,有利于企业的发展,而产品包装的开发难度大、资本回收的风险大,且产权保护难。由于此种观念长期根存于民俗食品业发展过程中,自然让延边民俗食品的开发受到“冷落”,也致使延边民俗食品包装设计研发的相对迟缓。

  民俗食品包装设计缺乏地域特色:

  民俗食品的生产企业没有形成产业化的经营规模,缺乏支撑性的企业力量。民俗食品的生产、销售大多属于个体经营,技术与资金不足,设计包装简陋,产品更新换代缓慢。此外,经营者的管理水平低,品牌意识薄弱。因此,导致延边有着一流的原材料,但民俗食品包装却不尽人意。如;朝鲜族传统大酱、方便冷面、泡菜、米糕、饼干、营养狗肉、辣椒酱、酱油、米糖等民俗食品包装大都工艺简单,无特色,制作粗糙,质量低下,创意陈旧。因此无法形成知名品牌。

  市场营销无序:

  根据对2002—2010年延边地方产品展销会的调查了解,延边民俗食品市场缺乏高效的管理机制,市场主体定位不清。生产、供应、销售各自为政,多数还处于小作坊式的经营状态,缺乏有效地协作和沟通,导致市场信息无法准确、快速、有效的进行流通和反馈,生产不能根据市场变化来及时调整。此外,由于规模小、资金不足,无法进行大规模的宣传和促销活动,不能扩大消费者对民俗色食品的认知和感知。这种零散的个体经营,难以形成一定的规模和档次,因此,开展灵活、深入地营销活动,这将对延边民俗食品市场的整体发展极为重要。

  职能部门、专业技术部门与企业缺乏沟通:

  近年来,政府职能部门每年投入重金组织地方产品展销会,但始终得不出满意的结果。其主要原因是,缺乏政府职能部门、专业技术部门和企业之间的交流与合作、缺乏行业机构的专门指导。同时,政府职能部门、专业研究部门也各自为政,造成延边民俗食品只开花不结果的尴尬局面。因此,加强政府职能部门与专业部门、企业之间的交流。鼓励和支持专业人士和产品开发者的积极参与,并设立专门的研究机构进行行业指导和技术培训。使延边民俗食品开发尽快走出低谷,沿着健康的发展方向迈进。

  “从经济学角度分析,任何一个产业的崛起与发展都和资源的开发与利用密切相关。作为第三产业重要组成部分的食品加工业也离不开民俗文化的开发与利用”。长白山脚下延边是天然野菜资源十分丰富的地区,对它进行综合开发与产业化是加快发展食品加工业,促进延边经济社会建设不可缺少的重要组成部分。

  近年来,延边特色产品种类逐年增加,并加工成商品远销国内外,如,土特产品中的野山菜类、长白山人参、鹿茸、灵芝、沙参、黑木耳、松茸、苹果梨、绿色大米、熊胆等,还有民俗食品中的泡菜类、方便冷面、精品狗肉、传统土酱、辣椒酱、民俗糕点、锅巴等,饮品中的长白山矿泉水、各种果品饮料、传统糯米酒等等。但是,这些产品的加工水平低劣、包装设计无地域特色与朝鲜族传统食品业飞速发展的强势形成了极大的反差。延边民俗食品的经济价值潜力巨大,可待挖掘的空间广阔,若对其进行合理、科学、有效的开发,必定会改善延边民俗食品市场的发展现状,使其呈现新的面貌。

  本研究从消费者的角度对民俗食品与包装的视觉效果进行定量研究,从而为地区或企业的民俗食品开发提供可参考的定量方法。根据对民俗食品理论的分析,以及对消费者购买行为的研究,考虑到民俗食品的特点,构建了民俗食品包装设计评价指标体系。主要从地方特色、创新性、民俗性、价值和便于携带性五个方面对民俗食品包装进行评价。

  延边朝鲜族可以说是中国朝鲜族的一个缩影,在饮食文化方面尤为如此。延边朝鲜族在特殊的地理、历史、经济条件下,继承了传统饮食习惯、融合了东北汉族饮食风味、汲取了半岛南部的饮食风格,形成独具特色的延边朝鲜族饮食文化风俗。

  中国朝鲜族民俗饮食一开始就受到消费者的普遍欢迎和市场的广泛认同,说明作为一种新型特色民俗食品开发,有着巨大的市场潜力和广阔的发展前景。民俗食品发展应随着民俗文化的发展而发展。民俗食品业的快速发展离不开一个良好的生态环境,延边民俗食品包装设计的特色开发要立足于关爱自然、保护自然、利用自然、享受自然的原则。充分体现现代饮食业的发展潮流和方向。
