) 摘要: 本文就啤酒大麦β—淀粉酶热稳定性的地理分布、基因定位、不同热稳定性β—淀粉酶类型产生的分子基础、不同热稳定性β—淀粉酶类型的表现、β—淀粉酶热稳定性变异和麦芽品质的关系以及提高β—淀粉酶热稳定性的方法进行了综述
同时提出了应开展β—淀粉酶热稳定性环境变异研究的思路

) Abstract: The studies on geographic distribution and gene mapping of β-amylase thermostability categories, molecular basis and performance of different forms of β-amylase, the relationship between malting quality and β-amylase thermostability variation, as well as approaches for improving β-amylase thermostability of malt barley were rerviewed in this paper
Meanwhile, the significance of investigating the genotypic and environmental variation of β-amylase thermostability in malting barley was proposed
